Prepping and cooking authentic Sri Lankan chicken recipes involves gathering a good number of ingredients but what if you want to whip up a quick chicken meal with minimal ingredients? We’ve got you perfectly covered with this four-ingredient baked Russian chicken recipe that’s a breeze to prepare but tastes oh-so-delicious.
All you need is four ingredients, a baking dish and only 10 minutes of prep time and one hour in the oven and you’ll be left with a drool-worthy dish that your family will keep asking for more.
- 1 bottle of Russian dressing. You can substitute this with a dressing using mayonnaise, ketchup, and a few savoury ingredients and spices to give it a spicy flavour
- 1 packet of dry onion soup mix
- 1 jar of apricot jam
- 4 to 6 boneless and skinless chicken breasts
Start off by preheating your oven to 350 degrees F. Then, move on to trimming off any fat from the chicken before rinsing and pat-drying it. Place the chicken in a 9×13 baking dish.
Mix up the dressing along with the soup mix and apricot jam in a bowl. Pour it over the chicken. You may choose to add in as much or as little of the dressing as needed. If you would like the sweetness of the dish to come through, you can use more of the jam but for a more spicy kick, add more of the dressing.
Bake it uncovered in the preheated oven for anywhere between 45 minutes to one hour until the chicken soaks in all the dressing and is well cooked through.
Serve it over hot rice or along with some rottis and enjoy!
