Chicken breasts have long since been known for its health benefits, which have made it the preferred choice of chicken cut worldwide. It is known to be an excellent source of protein, and vitamin B6. A 100grams of chicken breast meat contains 21 grams of lean protein. Research has proven that vitamin B6 is the ideal ingredients in reducing stress which cause PCOS. While keeping hormones in balance it controls testosterone and androgen levels.
- 4 ounces cream cheese, softened
- 1 cup shredded cheese
- 5 bacon strips, cooked and crumbled
- 4 green onions, chopped
- 1/4 cup chopped fresh Italian parsley
- 1/4 cup julienned oil-packed sun-dried tomatoes, drained, chopped and patted dry
- 1/2 teaspoon salt, divided
- 3/4 teaspoon pepper, divided
- 1 large egg
- 1-1/2 cups panko (Japanese) bread crumbs
- 1 teaspoon paprika
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1 tablespoon olive oil
Mix the cream cheese, shredded cheese, 5 bacon strips, green onions, parsley and tomatoes together along with 1/4 teaspoon of salt and pepper. In a shallow bowl, leave it to stand. In another bowl whisk the eggs and remaining salt and pepper, make sure that it is not too frothy. Separately toss bread crumbs with paprika. Preheat the oven to 350 degrees.
In order to cure the chicken, pound the pieces of chicken with a mallet (to 1/4 inch thickness). Then submerge the chicken in the cheese mixture, allowing it to lie in the mixture I order to absorb all the flavors. Then roll up the chicken meat starting from the short side and secure in a roll like fashion with a tooth pick.
Dip the rolls in the egg mixture ensuring it is well coated with it and then in the crumbs.
Place the rolls in the foil lined baking pan, drizzle with oil. Place it in bake and bake for 30 -35 mins (uncovered). Remove the toothpick prior to serving.
