Chicken is one of those much loved versatile ingredients that are not only wholesome and healthy but tastes absolutely great in whatever way it’s prepared. Sri Lankan food recipes uses chicken in a variety of recipes and one such way that chicken is enjoyed is in the traditional moreish way. This recipe adds a bit more oomph to your traditional chicken skewers and all you need is a few readily available ingredients to whip up this seriously mouthwatering chicken dish.

6 chicken thigh fillets
2 tbsp wholegrain mustard
1 tbsp vegetable oil
3 tbsp honey
2 tbsp soy sauce
2 tbsp tomato ketchup
You will also need 6 wooden skewers, soaked in cold water for about 30 minutes
● First, trim any excess fat and sinew from the chicken and then cut the fillets into one-inch chunks roughly.
● In a bowl, whisk together the remaining ingredients with some seasoning of your choice. Add in the chicken chunks and mix well to make sure that each piece is well coated. Cover and leave to marinate in the fridge for about three hours.
● Next, skewer the chicken, making sure the chunks are evenly spaced out and bunched up together.
● Finally, grill or barbeque the chicken skewers on medium heat for about 10 minutes or until cooked through, making sure to turn the skewers halfway to ensure even cooking.
