Brown butter is one of the best-kept culinary secrets that hardly takes two minutes to prepare but adds a wonderful layer of nuttiness and fragrance to your dish.
If you’re used to Sri Lankan food recipes that are usually more traditional, don’t be intimidated with this recipe. It’s very easy to prepare and is a great trick to have up your sleeves. Browned butter takes only about two minutes to prepare. It’s the process of caramelizing the milk solids in butter. Add chunky bits of tomato to this for a good saucy consistency. This dish can be served with brown rice or over a beautiful bed of couscous.

● 4 boneless and skinless chicken breasts
● ¾ teaspoons salt
● ¾ teaspoons black pepper
● 2 tablespoons of olive oil
● 2 tablespoons unsalted butter
● 6 cloves of garlic, thinly sliced
● 2 cups of tomatoes
● 3 tablespoons of fresh parsley leaves
Using a meat mallet or a heavy skillet, pound the chicken breasts on a cutting board to a thickness of about ½ inch. Sprinkle the breasts with ½ teaspoons each of salt and pepper. Next, heat one tablespoon of oil in a large pan over medium-high heat. Place the chicken to the pan and cook it for about 5 minutes on each side until done. Remove from the pan and allow it to rest. To the same pan, add the remaining 1 tablespoon of oil, ¼ teaspoon of salt and pepper each, butter, and garlic to the pan. Cook on medium heat for about two minutes or until the butter has just started browning, making sure to stir frequently. Add the tomatoes to this and cook for a further two minutes until the tomatoes are wilted. Spoon this mixture over the chicken and for some final garnish, sprinkle
some parsley over it when serving.
